Sultana Lemon Delicious

This month’s recipe is a classic and has been enjoyed by my family for years,” said Pine Rivers Branch member Paula. “It’s a cross between a self-saucing pudding and a souffle and a great way to use excess lemons. I hope you enjoy it!” 

Oven temp: 160  

Serves 4 – 5.

Ingredients 

  • ¾ cup caster sugar 
  • ¼ cup plain flour 
  • Finely grated rind of 1 large lemon 
  • ¼ cup lemon juice 
  • 60 grams melted butter 
  • 3 eggs, separated  
  • 1 ½ cups milk 
  • 3 tablespoons sultanas 

Method 

  1. Put ½ cup of the sugar, the flour, lemon rind and juice, melted butter, and egg yolks into a mixing bowl. Beat until mixed. Heat milk just enough to remove the chill. Add milk to lemon mixture, beat until mixed. 
  2. Beat egg whites until stiff, add remaining sugar. Fold gently into lemon mixture. 
  3. Put sultanas in the base of an ungreased medium sized oven dish and gently pour the mix on top. 
  4. Stand in another dish of cold water. (I covered mine to about ¾ of the inner dish). 
  5. Bake in a moderate oven for 40 mins until cooked and set. 

Serve when warm, or cold if preferred.
