This month’s recipe is a classic and has been enjoyed by my family for years,” said Pine Rivers Branch member Paula. “It’s a cross between a self-saucing pudding and a souffle and a great way to use excess lemons. I hope you enjoy it!”
Oven temp: 160
Serves 4 – 5.
Ingredients
- ¾ cup caster sugar
- ¼ cup plain flour
- Finely grated rind of 1 large lemon
- ¼ cup lemon juice
- 60 grams melted butter
- 3 eggs, separated
- 1 ½ cups milk
- 3 tablespoons sultanas
Method
- Put ½ cup of the sugar, the flour, lemon rind and juice, melted butter, and egg yolks into a mixing bowl. Beat until mixed. Heat milk just enough to remove the chill. Add milk to lemon mixture, beat until mixed.
- Beat egg whites until stiff, add remaining sugar. Fold gently into lemon mixture.
- Put sultanas in the base of an ungreased medium sized oven dish and gently pour the mix on top.
- Stand in another dish of cold water. (I covered mine to about ¾ of the inner dish).
- Bake in a moderate oven for 40 mins until cooked and set.
Serve when warm, or cold if preferred.
