Baked Apples Recipe

Ingredients  

  • 6 medium sized Granny Smith apples 
  • Half teaspoon cinnamon 
  • 2 tablespoons orange juice 
  • 30 grams butter or substitute 
  • 1 – 2 teaspoons sugar 
  • Optional – serve with low fat vanilla yoghurt and lightly toasted crushed macadamia nuts. 

Method 

  1. Start by soaking sultanas in orange juice mixed with cinnamon – this will plump dried sultanas  whilst you are preparing the apples. 
  2. Peel and core the apples. Place into cold water with a little lemon juice after peeling and coring  – this will prevent them from going brown. 
  3. Stand the apples in a baking dish, fill the cored centre with fruit and lastly top each apple with a small dob of butter.
  4. Cover the base of the dish with a little water mixed with sugar. This will create steam to cook the apples and form a light syrup. 
  5. Bake at 175 degrees for approximately 45 minutes or until the apples are soft but still holding their shape. After they are removed from the oven, brush each apple with a little of the syrup.  
  6. Serve baked apples warm or cold with a little low fat yoghurt and toasted crushed macadamia nuts.
