Ingredients
- 6 medium sized Granny Smith apples
- Half teaspoon cinnamon
- 2 tablespoons orange juice
- 30 grams butter or substitute
- 1 – 2 teaspoons sugar
- Optional – serve with low fat vanilla yoghurt and lightly toasted crushed macadamia nuts.
Method
- Start by soaking sultanas in orange juice mixed with cinnamon – this will plump dried sultanas whilst you are preparing the apples.
- Peel and core the apples. Place into cold water with a little lemon juice after peeling and coring – this will prevent them from going brown.
- Stand the apples in a baking dish, fill the cored centre with fruit and lastly top each apple with a small dob of butter.
- Cover the base of the dish with a little water mixed with sugar. This will create steam to cook the apples and form a light syrup.
- Bake at 175 degrees for approximately 45 minutes or until the apples are soft but still holding their shape. After they are removed from the oven, brush each apple with a little of the syrup.
- Serve baked apples warm or cold with a little low fat yoghurt and toasted crushed macadamia nuts.
