Throw Together Pie

Ingredients

  • 2 medium sweet potatoes, peeled & chopped 
  • 2 medium potatoes, peeled & chopped 
  • 500 lean beef mince 
  • 1 short cut bacon, diced 
  • 1 beef stock cube 
  • 1/2 teaspoon ground pepper 
  • 1/2 tablespoon olive oil 
  • 1 medium onion, diced 
  • 1 medium tomato, diced 
  • 1 stick celery, sliced 
  • 1/4 cauliflower, finely chopped 
  • 1 shallot, sliced 
  • 1 small carrot finely chopped 
  • 1/2 cup frozen peas 
  • 1/2 cup frozen corn 
  • 1 tablespoon Worcestershire sauce 
  • 1/2 tablespoon dried mixed herbs 
  • 1/2 cup low fat grated cheese for topping 

Method 

  1. Place potato & sweet potato in a saucepan, cover with water bring to boil – cook till tender. Drain then mash, add butter if required for a creamy consistency. 
  2. Place mince and bacon in a bowl, rub in crumbled beef stock and pepper. 
  3. Heat oil in a frying pan, add onion and cook for 2 – 3 mins, add meat mixture and cook on low heat until brown. 
  4. Place all remaining vegies in a saucepan, cover with water and cook till tender. Drain water, then add veggies to the meat mixture and Worcestershire sauce.  
  5. Spread mixture over greased base pie dish. Lastly, spread mixed potatoes on top.  
  6. Sprinkle with grated cheese and mixed dried herbs. 
  7. Bake in a 180 degree oven for 25 mins till golden and well heated through.
