Best Ever Muffins
Ingredients:
- Cooking spray
- 2 egg whites
- ¼ cup brown sugar (loosely packed)
- ½ teaspoon bi-carb soda
- ½ cup apple sauce (store bought in a jar)
- ½ grated carrot
- ¼ cup sultanas
- 1 small green apple peeled and grated
- ¼ rolled oats
- ¾ cup low fat cream
- 1 cup SR wholemeal flour
- 1 cup SR flour
Preparation:
- Preheat the oven to 180 fan-forced.
- Coat a 12 cup muffin tin with cooking spray.
- In a large mixing bowl, beat egg whites and sugar for one minute using a hand held electric mixer. Stir the bi-carb soda into apple sauce (it will froth) then add to the egg mixture. Next add carrot, sultanas, apple, oats & cream and mix well. Lastly gently fold in flours in one go, mix lightly by hand ensuring there’s no unblended flour.
- Spoon the mixture into the prepared muffin pan, divide mixture evenly amongst 12 cups.
- Bake for 15-20 minutes or until firm to touch in the centre.
- Allow muffins to sit five minutes in the tin before turning onto a wire rack to cool.
Great for school lunches or a quick breakfast on the go.
