This month’s recipe has been provided by Paula Surmon. This is a QCWA recipe used over many years and always enjoyed. I decided to have a go at making the recipe a little “healthier”, with a reduced sugar and fat variation with the added benefit of high fibre. I have included both ingredient lists and both variations produce a yummy, moist date loaf.
This Date Loaf is also suitable for freezing.
QCWA Date Loaf
Ingredients
- 4 Weetbix – crushed
- 60g Butter
- 1 Cup Sugar
- 210g Chopped Dates
- 1 Tsp Bi Carb Soda
- 1 Cup Boiling Water
- 1 Egg – beaten
- 1 Cup Self Raising Flour
Place the 4 crushed Weetbix into a bowl with the butter, sugar, chopped dates and bi carb soda. Pour 1 cup of boiling water over the mixture and let it stand for 5 minutes.
Add the beaten egg and the self raising flour and mix well.
Bake in a loaf tin in a moderate oven (180C) for 45 to 60 minutes.
Alternative Ingredients for a Healthier Date Loaf
- 4 Weetbix – crushed
- 60g of 78% reduced fat Margarine
- 1/2 Cup Sugar
- 210g Chopped Dates
- 1 Tsp Bi Carb Soda
- 1 Cup Boiling Water with 1 Tbsp Milk
- 1 Egg – beaten
- 1 Cup Wholemeal Self Raising Flour
